Seven Eves Carbonic Gris

'Seven Eves' is a new project from the loveable Somos chaps of McLaren Vale. The idea being best described by the boys:

"These wines are named after our philosophy when making them, they are designed to be varietal and focused, yet they are also quite juicy, fragrant, and easy to drink. Perfect for any night of the week, hence Seven Eves."

This is Pinot Gris turbocharged! Whole bunches are sealed into a tank for 14 days for carbonic maceration, before being pressed to wild ferment on full solids, then into barrel and lees-stirred for a further four months!

Deep colour, intoxicating perfume, voluptuous texture, this wine is a wildly delicious ride!
