Originally, Mezcal was produced by blending mature agave plants found in the fields. Master Mezcaleros selected the agave plants, and even if they were different varieties, they carried out the entire production process. Ensambles is our version of those original Mezcals, offering greater complexity and blending the flavors of the Espadín agave with wild varieties such as: Barril, Mexicano, Tepeztate, Tobalá, Coyote, Arroqueño and a special edition of four agaves.
